דפי אורז עם עוף ורוטב ממרח בוטנים

  • דפי אורז
  • גזר
  • מלפפון
  • נבטים 
  • חזה עוף 
  • קרם קוקוס
  • לימונית 
  • עלי נענע
  • עלי בזיליקום 

לרוטב:

  • 1/2 כוס ממרח בוטנים
  • 1/4 כוס דבש
  • 1/2 חלב קוקוס
  • 1/4 כוס לימון 
  • 2 כפיות רוטב דג (פיש סוס) 
  • שן שום קצוצה
  • כף רוטב סויה

מתכון: 

  1. Place coconut cream in a small frying pan. Add chicken and lemongrass to pan with enough tap water to just cover. Bring to a simmer over high heat, reduce heat to low, then cook for 10 minutes. Remove from heat. Set aside for 10 minutes (the residual heat of the water will finish cooking chicken).
  2. Next, cut up the rest of the veggies into strips and lay everything out so to make your rolling easier.
  3. Fill a large bowl with warm water. Place a sheet of rice paper in the warm water until slightly softened (about 15 seconds). Remove and spread out on a clean surface or cutting board. Pat dry with a towel to remove excess water.
  4. Lay a basil leaf over the bottom third of the rice paper, leaving about 1/2-inch clear on edges.
  5. Place strips of carrots, sprouts, cucumbers, and a few pieces of chicken, and add several mint leaves.
  6. Roll up the paper halfway into a cylinder. Fold both edges in to tuck while continuing to roll the paper to seal.
  7. Place the rolls on a plate covered with a damp towel so they stay moist as you prepare the remaining rolls.
  8. Once rolled, place on a plate.
  9. To make the sauce, just add all the ingredients of the sauce together, whisking it until even. If needed, add some more coconut milk or water.
